PINWHEEL SANDWICHES
1 Iarge sandwich loaf (white or wholemeal)
Filling:
2oz butter
8oz corned beef
A few drops of Worcester sauce
Salt and pepper
5 stuffed green olives for each slice
Remove crusts from bread and slice loaf lengthways into thin slices.
Cream butter with seasoning and mashed corned beef. Spread on each long slice of bread. Place a row of olives across the short end of the slice. Roll the slice tightly, wrap in tinfoil or clingfilm and put in the fridge. Only slice into rings when you are ready to use them.
These sandwiches can be frozen in the rolled up state in a freezer bag and sliced when removed from the freezer.
Alternative fillings: any kind of pate, mashed sardines, salmon, etc.
