PINWHEEL SANDWICHES

1 Iarge sandwich loaf (white or wholemeal)

Filling:

2oz butter

8oz corned beef

A few drops of Worcester sauce

Salt and pepper

5 stuffed green olives for each slice

Remove crusts from bread and slice loaf lengthways into thin slices.

Cream butter with seasoning and mashed corned beef. Spread on each long slice of bread. Place a row of olives across the short end of the slice. Roll the slice tightly, wrap in tinfoil or clingfilm and put in the fridge. Only slice into rings when you are ready to use them.

These sandwiches can be frozen in the rolled up state in a freezer bag and sliced when removed from the freezer.

Alternative fillings: any kind of pate, mashed sardines, salmon, etc.

CHOCOLATE TRUFFLES

7 tbs drinking chocolate

3 tbs icing sugar

3oz soft margarine

Put all ingredients in a bowl and mix well. Roll mixture into little balls. Cover with chocolate strands.

HOME-MADE LEMONADE

4 Lemons

3lbs sugar

2qts boiling water

1oz tartaric acid

Put the sugar and tartar acid in a large bowl and pour boiling water over it. Stir until dissolved.

Wipe lemons and remove rind very thinly, add to liquid.

Squeeze lemon juice and add to ingredients. Cover and leave overnight.

Strain, bottle and cork. This syrup will keep for 2-3 weeks and may be used as required by adding water to taste.

CHESTNUT STUFFING

3lb chestnuts

1 pt milk

3 tbs sugar

4oz margarine

Salt and pepper

Peel chestnuts (easier if done when roasted). Put into large saucepan with sugar and milk.

Bring to the boil, then simmer very slowly until chestnuts are soft and nearly all the milk has been absorbed.

Mash the chestnuts with the margarine until a lumpy consistency is obtained. Add pepper and salt to taste.

Excellent with turkey at Christmas.

SPRING ONION SAUCE

A Turkish recipe

1 bunch of spring onions

Pinch of salt

Pinch of ground black pepper

1 tsp lemon juice

3 tsp red wine

1 tsp oil

2 dsp tomato ketchup

Finely chop the spring onions (green part also), by hand (not in the food processor), and mix with all the other ingredients, Quantities may be increased according to taste.

This sauce is idea/for any kebabs or barbecues.
